CHICKEN AND CORN SOUP
SO SO SIMPLE, SO SO DELICIOUS.
The kids had been sick plus I was recovering from a little cold so what better way to nourish the soul and body than with some nourishing Chicken soup.
But I felt like something different so added some creamed corn.

QUICK CHICKEN AND CORN SOUP RECIPE
- Cooked Chicken (Organic or free range preferred) Meat removed and shredded, juice kept).
- 1 Large Onion Chopped
- 2 Carrots Chooped
- 2 Stalks Celery Chopped
- Filtered Water to cover
- 2 x 300g can creamed corn
- Salt and Pepper to taste
METHOD
- Heat oil in saucepan and add all ingredients, stirring for two minutes.
- Add juice of chicken and water to cover all ingredients, plus a little more.
- Bring to the boil.
- Add creamed corn and simmer until veggies are cooked.
- Serve and enjoy.
PREPARE IN ADVANCE NOURISHING CHICKEN AND CORN SOUP RECIPE
CHICKEN BROTH
- 1 Organic Chicken
- 1 onion
- 2 Carrots
- 2 Stalks Celery
- Filtered Water to cover
- 1 Tbsp Apple Cider Vinegar
- Salt and Pepper
METHOD
- Slow cook for up to 24 hrs.
- Strain and keep liquid in an airtight container in fridge overnight.
- Remove fat layer from top.
CREAMED CORN
- 4-6 Large Corn Cobs
- 1/2 – 1 Cup Cashews (soaked overnight)
METHOD
- Cook corn until tender.
- Remove corn from cob.
- Add corn and cashews to blender and blitz until smooth or to your desired consistency.
SOUP
- 4 x Organic Chicken Thighs, chopped.
- Chicken Broth
- Creamed corn
- Onion, Carrot, Celery chopped (optional)
METHOD
- Bring broth and chicken to boil.
- Reduce to simmer and allow chicken to cook.
- Add veggies if desired or simply just creamed corn.
- Bring to the boil.
- Serve and enjoy.
